Mix flour and salt, add egg and half of the milk. Beat to a thick batter. Add the rest of the milk and half of the butter that has been melted in the pan. (By not adding all the fluid at once it becomes easier to obtain a lump-free batter).

Fry the pancakes and set aside.
Fillet the orange segments.
Melt the butter, add sugar and let melt. Add some juice from the orange. Cook. Turn over the pancakes, add the orange fillets as well as the alcohol and flambé. Garnish with whipped cream if you wish.

  • Replace the milk with coconut or oat milk.
  • Add a little orange zest with a grater.
  • Make the pancake batter at home, or the day before, so it has time to "mature".
